Italian Frittata


  • 1 Tbsp. olive oil
  • 1 medium onion, chopped
  • 1 medium zucchini, halved lengthwise and cut into 1/4-inch thick slices
  • 1 cup lean turkey sausage
  • 2 eggs
  • 1 cup liquid egg whites
  • 1/4 cup skim milk
  • 1 tsp. Italian seasoning
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper
  • 2 medium tomatoes, sliced
  • 1 cup reduced fat shredded mozzarella cheese


  1. Heat the oil in large ovenproof nonstick skillet on medium heat. Add the onion and zucchini; cooking for 2 minutes. Reduce the heat to medium-low. Add ham and cook for another 2 minutes.
  2. In another bowl, beat the eggs, egg whites, milk, Italian seasoning, salt and pepper in medium bowl. Pour into the skillet, cooking without stirring for 5 minutes or until the eggs are set on bottom. Arrange the sliced tomatoes on top of the egg mixture.
  3. Sprinkle the cheese over the top of the pan. Transfer the pan to an oven and broil 4 to 5 minutes until the eggs are set and the cheese is lightly browned.
