- 2 1/2 lbs., lean pork tenderloin (visible fat removed)
- 1 onion, diced
- 4 garlic cloves, minced
- 3/4 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. oregano
- 1 tsp cumin
- 2 jalapeno peppers, core removed
- 3/4 cup low-sodium broth of choice (chicken, vegetable, etc.)
- 1 bay leaf
- Place the pork in a slow cooker.
- Mix together all of the ingredients in a bowl and pour over the pork.
- Cook for 6-8 hours on low until the pork is fork tender and easily shreds.
Makes about 8 servings
