Carnitas

Ingredients 

  • 2 1/2 lbs., lean pork tenderloin (visible fat removed)
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. oregano
  • 1 tsp cumin
  • 2 jalapeno peppers, core removed
  • 3/4 cup low-sodium broth of choice (chicken, vegetable, etc.)
  • 1 bay leaf

Directions

  1. Place the pork in a slow cooker.
  2. Mix together all of the ingredients in a bowl and pour over the pork.
  3. Cook for 6-8 hours on low until the pork is fork tender and easily shreds.

Makes about 8 servings
