2 HIGH FIBER, LOW-CARB whole wheat tortillas

1/2 cup tomato sauce

1 cup low-fat cottage cheese

3 tablespoons liquid egg whites

4 ounces turkey ham, chopped

1/2 small can (6 oz.) pineapple chunks

1 medium bell pepper, chopped

1/2 cup reduced fat mozzarella cheese


  1. Blend the cottage cheese and egg whites together in a food processor or blender until the mixture is smooth.
  2. To the tortillas, add the ingredients in the following order: tomato sauce, cottage cheese/egg mixture, mozzarella, turkey ham, pineapple chunks, and then green pepper.
  3. Bake for 10-15 minutes at 425°F, broiling for the last 5 minutes.
