White Chicken Chili


1 pound boneless, skinless chicken breasts

2 teaspoons extra virgin olive oil

1 onion, diced

1 tablespoon minced garlic

1 (4-ounce) can diced green chilies

1 teaspoon chili powder

1 teaspoon dried oregano

2 teaspoons cumin

Salt, to taste

Black pepper, to taste

1 (15-ounce) can white beans (cannellini/white kidney beans), drained and rinsed

4 cups reduced-sodium chicken broth


  1. Place all of the ingredients in the slow cooker, and stir together.
  2. Cover and cook on high for 4-6 hours or low for 6-8 hours.
  3. Using tongs, remove the chicken and shred it. Add it back to the slow cooker and serve each portion with optional Greek yogurt, cilantro, avocado, and/or low fat cheese.
