Mixed Berry Crisp

Ingredients 

  • 2 Tbsp. whole wheat flour
  • ¼ cup old fashioned oats
  • 1 Tbsp. honey
  • 1 Tbsp. coconut oil, chilled
  • 2 tsp. lemon juice
  • 2 cups frozen mixed berries

Directions

  1. Preheat an oven to 350° F.
  2. Combine the flour, oats, honey, and coconut in a food processor. Process until the mixture is crumbly. Add the lemon juice and berries to a medium bowl and toss to combine.
  3. Divide the berries between four ramekins. Top with the crumble mixture.
  4. Bake for 30 minutes or until the tops are golden brown and the berries are soft and bubbly.

Makes 1 serving.
